Preparation Method
- In the mixing bowl of the stand mixer fitted with the flat beater attachment, add butter and lemon zest. Beat on medium-low (3–4) speed until blended, about 1 minute. Add chives and beat just until combined, about 30 seconds.
- Using a spatula, place the compound butter in a medium ramekin. Serve with warm bread.
Pro Tip
Unsalted butter may be substituted for salted butter, but add 1/2 teaspoon (3 grams) salt before mixing.
