Thyme Simple Syrup
Make thyme simple syrup: Place the water in the blender, followed by the sugar and thyme sprigs. Select the SOUP setting and press start. When cycle is complete, pour syrup into a separate container. Syrup will keep for up to one month in the refrigerator.
Make Gin Toddy
Place gin in the blender, followed by the lemon juice, 1/3 cup thyme simple syrup and 1 cup ice to blender jar. Select MANUAL/LO and blend, gradually increasing the speed to SPEED 8 until ice is fully dissolved, about 15 seconds. When cycle is complete, pour toddy into 4 glasses filled with ice. Serve with thyme sprig and lemon peel, if desired.
